If you play your movies with mplayer you just specify -sub <file> on the command line. You can also specify about 20 other parameters affecting the appearance of the subs, and you can also adjust sub position, size, delay, etc. while playing.
I believe that if the movie file and the subtitle file have the same name (minus the extension, obviously), then mplayer will add the subs even if you don't tell it to explicitly.
