Yup, if you compile from source and want all the fancy-dancy options, you might need to install/upgrade a bunch of other libraries first. However, there's usually a bare minimum install (one audio driver, one video driver, no GUI, just libavcodec, etc.) that your basic Unix distribution should support out-of-the-box.
And then, as you said, you can always get precompiled versions (especially if you're on Windows).
