When I was growing up in Essex they used to serve gravy chips at every school dinner, so not just a northern thing. Maybe just a chav scum thing?
Anyway NS whereas I normally respect your reserved and considered opinions, you're wrong on the chips/cheese debate. If you can find squeezy cheese - not Primula - proper squeezy cheese they sell in the US, the stuff that looks like mustard but isn't then that can't be beaten on cheese.
That said, blue cheese or Wensleydale will also work on chips. Cheddar not so much, takes too long to melt.
